2, the production method
(1) Choosing potatoes. Choose a sweet potato with a smooth surface, no pests, no green heads, and moderate size.
(2) Clearance. Put the selected sweet potato into the basket and put it in the water. Wash away dirt and impurities. Cut off both ends and surface roots.
(3) Crushing. The cleaned sweet potato should be chopped in a grinder in time and then ground into a slurry. When beating, add water while grinding, and the finer the better, the starch granules in the cells should be ground as much as possible to increase the powder yield.
(4) Filtration. The aim is to achieve separation of the pomace and starch. Generally, a 2-5 foot suspension cloth is used as a filter bag for filtration, and the mixture is filtered twice. The first time the slurry is thinner, the second time is thicker. The filtrate is then sent to a sedimentation tank (the pomace can be used as a feed). After standing in the pool for two days, release the supernatant from the pool. Add 1/3 of the original water to the water and stir again. This time the filtrate enters the small pool and settles.
(5) Exposure to starch. When there is no turbidity in the water in the pool, that is, after all clarification, the supernatant is drained. The surface oil powder on the surface of the starch precipitate layer is removed, and the lower layer starch is taken out and suspended into powder meal (ie, powder group), and moved to the drying field for exposure. When the water in the whitefly evaporates half, the whitefly is cut into several portions for exposure. The drying field is located in the leeward sun to prevent dust pollution.
(6) Beat the paste. This process is the key to determining the quality of the fans. Add 25 grams of alum per 500 grams of starch, stir 2.5-3 kilograms of cold water, then boil in a large pot, and continue to stir, maturity of 8-9% (formation of gelatinized starch). The paste is made into a moderately soft dough for other starches.
(7) Leakage and cooling. Prepare two pots (model 8), two cold water tanks and a medium 48-hole colander. Because the sweet potato fans are thicker, the colander holes are slightly larger than the other fans' colander. When the wire is leaking, the paste should be fully stirred evenly, and the water is heated while stirring, and the water temperature is about 50 °C. Grab a group of powder paste and let it extend naturally. If it is not broken, it means that it is moderately thick and can begin to leak. Prepare a pot of boiling water, and constantly fill the leaking pot. When the water in the leaking pot is nearly boiling (97-98 °C), the wire is leaked, and the powder is flowed down through the hole of the colander, gradually becoming thinner and become a fan (conditional It is best to use a fan machine). After the fans sink into the bottom of the pot and then float out of the water, they will be fished out, placed in a cold water tank to cool down, hand-assembled into a bundle, put on a wooden frame, and then cooled by another cold water tank, and continually oscillate Until the fans are loose, then placed indoors, cold and then take out the outdoor silk.
(8) Tanning. Take the fans to the leeward sunny place and hang the sun. After drying, it can be packed into finished products.
